Quick & easy 'Mad Matcha' pancakes
Not that I don’t enjoy the process of cooking, but I’m a big fan of the ‘stack-it-all-in-there-and-stir’ kinda recipes. SO, let me introduce you to my super fluffy matcha pancakes made in minutes. Perfect for a week-end brunch!
What you need:
1 Buttermilk Pancake Mix (I told you I like it easy) – My personal favourite is the Buttermilk GF from Woolies.
3 teaspoons of our ‘Mad Matcha’
½ teaspoon of ground cinnamon
1 good old non-stick pan with your choice of cooking oil/spray/butter – I use coconut oil.
For the final touch: your favourite toppings (whipped cream, pure maple syrup, sliced almonds and/or fresh seasonal fruits)
Directions:
1. In the pancake mix shaker, add the ‘Mad Matcha’ and the ground cinnamon, top-up with water.
2. Shake until smooth.
3. Let the batter sit while you heat up your non-stick to medium heat.
4. When the pan is thoroughly heated, grease it. Spoon ¼ cup of the batter for each pancake.
5. Cook until the edges of the pancake appear dry. Flip and cook the other side.
6. Repeat with the remaining batter.
7. Stack the pancakes up, add toppings and ‘bon appétit’!
